It's great that you enjoyed a trip to Niagara Falls! Now, let me answer your questions. Speaking of water sights, in Saint Petersburg you can enjoy a beautiful view of the Gulf of Finland. Actually I've never gone rafting as I don't know how to swim. In general I think that extreme sports are fun to watch but too dangerous to perform.
Anyway, you've mentioned a trip to Greece. How many days are you going to stay there? What sights are you planning to visit? Who is going with you?
